Ingredients

Dressing

  • 150 g vine tomatoes, roughly chopped
  • 180 g watermelon, peeled and roughly chopped

Method

First, make the dressing. Put the chopped vine tomatoes and watermelon into a blender and blitz until smooth. Pass through a sieve into a bowl (discarding the pulp left in the sieve) then add the white balsamic and salt. Taste and adjust the seasoning if needed. Chill for an hour.
