One thing that we’ve always done at The Little Chartroom is a cheese dessert rather than a cheese selection. It’s always fun to think up more elaborate dishes and combinations, like a cheese custard and gooseberry Paris-Brest, or toasted crumpets and whipped blue. One of my all-time favourites was this nectarine tarte tatin.

You’ll need a 20cm-diameter frying pan that can go in the oven.
