This is a real celebration of berries. It’s a simple dessert to make and put together, but the strawberry consommé and roasted vanilla cream both need a couple of hours to make and chill, so allow yourself some time.

Ingredients

Strawberry Consommé

  • 1 kg frozen strawberries
  • 50 g sugar

Method

Start with the strawberry consommé. Mix the frozen strawberries and the sugar in a heatproof bowl and cover with cling film. Put them over a pot of simmering water and cook very gently for an hour – you will see all the natural juices coming out of the fruit. Strain through a fine sieve or muslin and leave to drip through so you get every last bit of juice. You should get about 200ml. Don’t squ
