This will make more than you need to make a cocktail, but it can be kept for up to a week in the fridge and is delicious with lemonade or soda.

Ingredients

  • 300 g strawberries
  • 200 g sugar
  • 300 ml

Method

Cut the stems off the strawberries, then cut them in half. Put them in a pan with the sugar and 300ml water and bring to a simmer over a medium heat. Simmer gently for 10 minutes, until syrupy. Leave to cool a little and then strain into a bottle or Kilner jar.
