You need a bit of fat to make these kofta properly juicy, so if you’re unable to get pork fat, a fatty piece of pork belly will work well too. The apple juice takes time to get to the right consistency, but it’s worth it to get lovely, sweet, sticky molasses.

Ingredients

Apple Molasses

  • 1 l apple juice
  • 50 ml cider vinegar
  • 50

Method

To make the apple molasses, pour the apple juice into a large, heavy-bottomed pot and add the apple vinegar and treacle. Boil over a medium-high heat for 45 minutes to an hour, until it has reduced down to about 150 to 200ml and has a syrupy consistency. Turn the heat down a little as it reduces, and watch it closely as you get to the end of the cooking time so it doesn’t burn.
