One of my favourite goat’s cheeses is Blackmount, which is made by Selina Cairns, an amazing Scottish cheesemaker. It is punchy and tart, which works perfectly with all the carrot flavours.
Take the large carrots, then thinly slice one of them and put the slices into a bowl. Cut another two of them in half lengthways and set aside, then roughly chop the carrots you’ve got left. Warm the pickle liquor and pour it over the thinly sliced carrots.
