It’s best to stone the damsons as they can taint the taste of the finished gin, but a cherry stoner does the job very easily.

Ingredients

  • 500 g damsons
  • 250 g caster sugar
  • 1 l</

Method

Wash the damsons, then remove the stems and stone them. Place the damsons and sugar in the Kilner jar and shake so it is thoroughly mixed. Pour over the gin and seal the jar.

For the next 5 to 7 days, shake the jar daily until the sugar has all dissolved, then store in a dry, dark place for a minimum of 4 weeks and a maximum of 3 months. The longer you store it, the better the flavour w
