Ox tongue sandwiches and soup were a regular favourite at my grandparents’, and I wanted to make something similar for the restaurant lunch menu: so the ox tongue soldier was created! The perfect dipper but also amazing by itself.
Place the ox tongue in a pot and cover with cold water. Bring to a boil, then strain through a colander and rinse the tongue under the cold tap. Put it back into the pot and cover with fresh, cold water, then add the chopped carrots, onion, bay and salt. Set aside a few sprigs of the thyme and put the rest in the pot.
