  • 2 oranges
  • 100 g butter, cubed
  • 90 g sugar

Method

Juice and zest the oranges and measure out 75 ml of the juice. Place the butter, sugar, beaten eggs and citric acid in a pot with the orange juice and zest. Cook over a low heat, whisking all the time, until the curd reaches 82°C and is nice and thick and coats the back of your spoon.
