The pear cordial will make more than you need but keeps well stored in the fridge and is great for soft drinks too, topped up with lemonade or soda.

Ingredients

  • 400 g pears
  • 200 g sugar
  • tsp

Method

Roughly chop the pears, just discarding the stalks. Put into a pan with the sugar and 500ml water and simmer for 15 minutes over a medium heat. Pass through a fine sieve into a bowl and leave to cool.

In a cup or small bowl, mix the citric acid with 25ml water. Add this to the pear cordial, then pour it into a sterilised bottle or Kilner jar and store in the fridge.
