This is a great base recipe that you can add all sorts of tasty twists to, from wild garlic mayo to Savora mustard mayo. Hellmann’s is good, but this is better.
In a small bowl, whisk the egg yolks, white wine vinegar and mustard together with a pinch of salt and 1 tsp of water. Slowly drizzle in the oil, whisking continuously so the mayonnaise emulsifies. Taste and adjust the seasoning.
