In a stand mixer, mix the butter and icing sugar together until just combined, then mix for 1 minute on medium speed. Add the egg and mix – don’t worry if it looks curdled. Add the flour and a pinch of salt and mix until it is just combined. Empty the dough on to your worktop and shape into a flat disc with your hands, then wrap in cling film and rest in the fridge for at least 2 hours.
