This recipe takes a little organization and advance preparation: the muslin should be scalded in hot water, then squeezed almost dry before using. The fromage blanc and single cream should not be too cold, room temperature is best. The finished cream will keep for up to 3 days stored in the refrigerator.

Method

  1. Beat the fromage blanc until thick. Over a bowl, place a fine mesh colander lined with muslin. Put the thickened fromage blanc in the muslin and tie up the cloth.

  2. Allow the watery whey to drain through into the bowl.
