Rose veal has a delicate flavour and is not to be confused with baby white veal, which in the past had put off many people from buying because of the way the animals were reared. This is veal with a good conscience. It has an affinity with cheeses such as Taleggio with its salty, creamy taste, but you could easily use a goat’s cheese.

Method

Flatten the escalope with a wooden flat paddle or wooden spatula. Place thin slices of cooked ham, or prosciutto di Parma on top to cover, followed by thin slices of Taleggio (a young one would be best for this dish) and finally a leaf or two of sage.
