Spring Salad of Asparagus, Proscuitto and Fava

The first of the English asparagus arrives around Easter, or just after depending on the weather, and then there are Italian fava (broad) beans, fresh peas and purple basil all heralding the new season. What a relief, after the long dark winter and all those delicious filling stews, to have a crisp fresh salad again. I have to tell you I enjoy this with a glass of Prosecco, as the fizz works so well with
