These thin, lacy crisps can be made in moments, so if you run out just have some finely grated Parmesan in the freezer at the ready. As an aperitif they are hard to beat, especially when served with chilled Prosecco or white wine. The important thing to remember is that you do need to use a well-matured Parmesan as young cheeses do not taste as fruity or have as crisp a texture.
