Savoury scones are really easy to make and are delicious served warm for breakfast, lunch, tea or supper. They are perfect for picnics too, although my favourite way of serving them is with a filling of herb goat’s cheese topped with the salty sweet crisp shards of speck.

Ingredients

  • 250 g (9 oz ) self-raising flour, plus extra for dusting
  • ½ tsp baking powder

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Place the speck or ham on a baking sheet and cook until crisp, then set aside.
  2. Sift the flour, baking powder and salt together in a large mixing bowl. Add the Parmesan, cayenne and mustard powder, if using. Rub in
