Ingredients: 1 large onion, very finely chopped; 100 ml white wine vinegar; 125 g smimeji mushrooms; 100 ml water; 600 ml good dark brown beef stock; 200 ml red wine; 4 large carrots for garnish; 100 g caster sugar; 25 ml vegetable oil; Salt; 25 g butter; 150 g sourdough bread, blended into fine crumbs; 400 g piece of centre cut Galloway beef fillet; 30 g butter; 1 tsp cumin seeds; 2 star anise; 250 g large carrots; 125 g fresh crepinette or pig’s caul, well soaked; 25 g fresh thyme; 6 cloves garlic, peeled; 2 onions, peeled and roughly chopped; 400 g oxtail, cut into 2cm pieces
