Smoked paprika, Cheddar and oregano sourdough loaf


  • 200 g active levain - see part 1
  • 250 g water
  • 400


  1. Mix flour, oregano and water roughly so there’s no dry patches of flour and leave covered to autolyze for 1 hour.
  2. Place in a mixer bowl, add levain and salt and mix 3 minutes at medium speed and 3 minutes at high speed (mix until the dough has cleared the bowl and has a nice shine).
  3. Turn out onto lightly floured surface and perform stretch and fold.</
