Hummus is one of the great exports of The Middle East and a great staple for any chefs thinking about vegan customers and vegetarian options. Made from chickpeas flavoured with tahini (a paste made from sesame seeds) lemon, garlic and olive oil it can be a dreamy concoction that delights any palate - especially when freshly made.

Ingredients

  • 300 g chickpeas
  • 3 cloves of garlic

Method

  1. Select large grade A chickpeas. They should be sifted and checked. Often you will find stones, pebbles and other foreign objects amongst them.
  2. Soak the chickpeas overnight in water and leave them at room temperature. Drain the water and rinse the chickpeas three times whilst rubbing the peas with your hands.
  3. Boil the chickpeas with a few cloves of gar
