Carbonara is a dish from Rome. Some say it was invented during the Second World War to tempt American soldiers with a pasta dish of bacon and eggs. Others date it to much earlier with reference to a dish from Naples that contained melted lard, eggs and cheese.

Whichever story is correct doesn’t matter-Carbonara is an international hit and is another deceptively simple dish that can take some understanding. And as with all dishes that contain egg it needs some judgment.
