A dosa in India is a form of pancake cooked in a similar way to a French crepe — on a griddle. Unlike the crepe the dosa is cooked until crispy and then filled with a special spiced potato filling and served with chutneys and a light vegetable curry. As the dosa is made of black lentil (not really a lentil but related to mung beans) and rice it is gluten free. However, it’s other bonus is that the flour is fermented overnight which gives it a very healthy connotation.
