The combination of pears and almonds is well established and this old favourite never ceases to please. The secret is a good sweet pastry and a good “frangipane” which is the almond cream that lines the tart. Poached pears are arranged in this and then baked. It’s a dish that’s as much at home in a small café as it is in a top dining room.
