This dessert is one of the great restaurant dishes ever invented. It never fails to please and is always an impressive sight. Grand Marnier is a Cognac and orange liqueur made in France to a recipe invented in 1880. It is one of the classic liqueurs and has a space on any drinks trolley or after-dinner drinks menu.

This dish was a mainstay of the menu at 3-starred The Waterside Inn and was a personal favourite of the late Michel Roux OBE who was an outstanding pastry chef in his own
