Bibim guksu is a cold Korean noodle dish that takes only a few minutes. Bibim means “mixed” and guksu means “noodles” in Korean, so it translates as “mixed noodles.” Typically, it’s made with a mix of gochujang and sour, fermented kimchi and lots of toasted sesame oil, all tossed with cooked somen noodles. It’s a refreshing dish that I particularly enjoy slurping during summer.
