Tofu is such a versatile ingredient to cook. You can deep-fry or sauté it and even eat it raw. One of my favorite tofu dishes is dubu jorim, Korean braised tofu in a gochujang-forward sauce. Inspired by that dish’s techniques and flavors, I let the savory qualities of chili crisp shine in this version. Kimchi adds a slight tang, as well as another layer of heat. Be sure to use firm or extra-firm tofu for this dish so that the tofu planks can hold their shape while braising. The final result
