The combination of chiles and spices has changed throughout the years, evolving to my preferred tastes. The fruity ancho chile is the foundation, followed by the spicier guajillo. Adobo paste pairs so well with smoke and flames, just slather this on whatever meat you choose, marinate, and fire it up.</
