Chipotle Bacon Twice-Baked Potatoes

Growing up in a Midwest family means that twice-baked potatoes are usually showing up at the party. My mom would always set some aside in the fridge, knowing that these were my favorite leftovers. If you’ve never had the pleasure: Baked potatoes are scooped out and mashed with a classic combination of sour cream and cheese; however, my recipe is also fortified with chopped chipotles and scallions. Spicy, creamy, and smoky flavors pair well with pretty much any type of barbecue.
