This is an ingredient that cannot be bought in markets. It was created by an elderly chef who told me what its ingredients were. I created the recipe. It is a delicious ingredient when added to recipes. Here is how you make it:

Ingredients

  • 1 cup of the stringy whiskers end of scallions, washed and dried thoroughly
  • 1 cup green portions of scallions, cut into 3 sections, washed and dried th

Method

Directions

Heat a wok over medium heat. Add peanut oil, then add all scallions. When scallions brown, the oil is done. With a strainer, remove and discard scallions. Strain the oil through a fine strainer into a mixing bowl and allow to cool to room temperature. Pour scallion oil into a glass jar and refrigerate until needed. Makes 3
