Ingredients

  • 24 silver-dollar-sized dried Chinese black mushrooms
  • ½ teaspoon salt
  • 1 teaspoon

Method

  1. Soak the mushrooms in hot water for 1 hour. Wash thoroughly and squeeze out the excess water. Remove the stems and place the mushrooms in a heatproof dish.
  2. Add the salt, sugar, and soy sauce to the dish and toss with mushrooms.
  3. On top of the mushrooms, place the scallions, chicken fat, and ginger. In a steamer steam them for 30 minutes.
  4. Turn
