  • 2 pounds Tientsin cabbage, white portions only: wash and dry thoroughly (10 cups tightly packed)

Method

  1. Cut cabbage stalks diagonally at ¼-inch intervals. Place in a large bowl. Sprinkle with salt and mix thoroughly with hands. Allow to stand, covered, overnight in refrigerator.
  2. Drain off liquid. Add sliced sweet pepper, white vinegar, sugar, sesame oil, and hot oil. Toss together in the bowl. Set aside.
