- 1 pound medium shrimp, 26 to 30: shell, devein, wash, dry thoroughly
Method
- Marinate shrimp for 30 minutes. Drain through a strainer, but reserve liquid.
- Heat a wok. Add peanut oil. When a wisp of white smoke appears, add minced ginger. Coat wok with a spatula, add brown bean sauce, mix.
- Over high heat add shrimp. Spread in a thin layer, tipping wok from side to side to spread heat evenly. Turn over. Add wine around edges. To
