  • 2 whole 1-pound chicken breasts
  • 8 cups water

Method

  1. Place the chicken in a large pot with the water and add scallions, salt, sugar, ginger, and garlic. Bring to a boil over high heat. Then lower heat and partially cover the pot. Cook for about 25 minutes.
  2. Remove chicken from the pot and place in a bowl with enough cold water to cover chicken. This will stop the cooking. Let it sit for 5 minutes.
