The origins of this popular dish lie somewhat north of Canton, somewhat south of Peking. It is one of those preparations that is virtually universal in China, and just about everywhere else, but in the course of time it has come to be thought of as Cantonese. It is certainly true that the Cantonese prepare it better than anyone else. In fact, when Prince Philip, the Duke of Edinburgh, visited Hong Kong, it was the first food he asked for.
