The people of Shanghai tell a story about this dish. It seems the crown prince was traveling incognito about China and came upon a small restaurant in Shanghai, where it was fed to him. He is reported to have interrupted his trip and returned to Peking in order to tell the Imperial chef about it. It is a lovely story about a lovely preparation.
