  • pounds bean sprouts
  • 1 medium-size sweet red pepper, thinly sliced
  • 4 to 5 scallions

Method

  1. Wash and drain bean sprouts thoroughly. Slice peppers and scallions.
  2. Heat a wok over high heat for 1 minute. Add peanut oil; coat sides of wok with oil, using spatula. When a wisp of white smoke appears, add bean sprouts. Stir-fry for 30 to 45 seconds. Add pepper; stir. Add scallions; stir well. Remove vegetables and place in a strainer; allow liquid to drain o
