Ingredients: 2 teaspoons sugar; 2 teaspoons minced garlic; 2 teaspoons light soy sauce; 2 teaspoons dark soy sauce; 2 tablespoons dark soy sauce, to coat duck before roasting; 1 tablespoon sesame oil; 1 teaspoon cornstarch; 1 tablespoon oyster sauce; Pinch of white pepper; 1½ tablespoons peanut oil; 1 teaspoon minced ginger; 2 teaspoons white vinegar; 3 teaspoons Shao-Hsing wine or sherry; 3 cups glutinous rice; 3 cups chicken broth; ½ cup fresh water chestnuts: peel, wash, cut into ¼-inch dice; ½ cup dried Chinese black mushrooms, 6 to 8: soak in hot water for 30 minutes, wash, discard stems, cut into ¼-inch dice; 8 scallions: discard both ends, wash, dry, slice finely; ¾ cup bamboo shoots, cut into ¼-inch dice; 2 tablespoons oyster sauce; 1 teaspoon sesame oil; 1 teaspoon white vinegar; 1 duck, 4 to 4½ pounds; ¾ cup lotus seeds; 8 ounces shrimp: wash, shell, devein, cut into 14-inch dice; ½ teaspoon ginger juice mixed with 1 teaspoon sherry; 1¼ teaspoons salt; 2¼ teaspoons sugar; ½ teaspoon light soy sauce

This is an important, symbolic preparation. The duck must be stuffed with eight ingredients and only eight, to represent the eight immortals of Taoism, the eight auspicious signs of Buddha, the eight organs of Buddha’s body, the eight famous horses of Mu Wang of the Chou dynasty, the eight paths to everlasting happiness It seems to be placing an awful lot of symbolism on a single stuffed duck, but that is the truth of it.
