No banquet as important as that on New Year’s Day would be considered complete without shark’s-fin soup. In Canton and Hong Kong, where such soups are rated by the quality and rarity of as many as 20 different species of shark, the soup can be as expensive as an entire banquet. To prepare it in the traditional manner requires some time, but the result is worth the effort.
