In China this dish is traditionally prepared by cooking a pork shoulder, with fat and skin intact, atop the stove with honey and soy sauce. It is quite greasy. My version eliminates virtually all of the fat and the ham is most tender.

Ingredients

  • pounds fresh ham, shank half: have butcher remove the skin, but leave a thin layer of fat

  1. Preheat oven to 375°F. for 15 minutes.
