This is a well-known food preparation in Shanghai, where it is eaten as a snack and also used to prepare Shanghai’s equally famous sweet Wine Rice Soup. The sweetness of the rice is due to its fermentation. Only when a soup is made is more sweetness added, in the form of sugar.

  • 2 cups glutinous rice
