People are often startled to hear that there is ice cream in China, but in fact ice cream, a Western import, has been part of the menus of Canton, Hong Kong, and Shanghai for some time. If you’d like a treat, stop in at the Tah Dah Restaurant on Nanking Road in Shanghai and try one of their ice cream sodas.

Ingredients

  • 6 cups peanut oil
  • 1 package (about 10 ounces) sliced

Method

  1. Heat a wok over high heat; pour in 4 cups peanut oil. When a wisp of white smoke appears, place almonds in a strainer and lower into the oil. Fry for 10 seconds, remove from oil, allow to drain and cool. Strain oil and reserve.
