The key ingredient here that makes this char siu sauce unapologetically Chinese is the red fermented bean curd, or tofu. You can find it in most Chinese markets, usually in a short glass jar with cubes of tofu inside. There are essentially two types of fermented bean curd: red and white. The red bean curd is fermented with red rice and has more alcohol content, more pronounced flavor, and a sweeter taste compared to the white. I prefer the red for cooking, but either one will work for this
