In Chinese cooking, we prize a dish on its fragrance as much as its flavor and mouthfeel. Scallion oil is the most basic condiment that is added into so many dishes, almost like a finishing salt in Western cooking. It’s a garnish as well as the foundation of the flavors the dish is built on.
