Mapo Tofu has been a favorite of mine since I was a little girl. When I started learning how to cook in my grandma’s and mom’s kitchen, this was one of the first dishes I made, probably because it was so easy. All Asian supermarkets carry a ready-made Mapo Sauce (which comes in a foil satchel inside a box), and all you need to do is pan-fry some ground meat, add the sauce, and add the cubed tofu. It was fast, simple, protein-packed, and delicious! In fact, I would make this dish every week
