In the past, animal fat was marketed as being very bad for your health. Traditional Chinese cooking, and probably most ethnic cuisine for that matter, prefer lard or tallow as the fats of choice. It only made sense. It’s easily accessible, easy to make, inexpensive, unprocessed, natural, full of flavor, and now we know them to be non-inflammatory too! But somewhere along the way, manufacturers were able to convince us that highly processed oils like canola oil are healthier.
