At the restaurant, we serve both kinds of pork bellies: siu yuk and char siu. And I intentionally named them that way to assimilate the public to my culture! After all, we don’t call a quesadilla a Mexican grilled cheese. So why should we dilute the authenticity of ethnic dishes by translating them? Pizza is not called Italian flatbread.
