Kaya is one of my favorite bread spreads, iconic to Malaysia, Singapore, and Indonesia. It’s basically a coconut custard made with eggs, coconut cream, sugar, and pandan leaves. There are two types of kaya custard: one is dark brown with a strong caramelized sugar profile, and the other is green, without the caramel but with a strong pandan flavor. Pandan leaf, also known as screwpine leaf, is a long grass-like leaf, dark green in color and only found in the frozen aisle in Asian markets. I
