This one is a real delight: simple to make, and it can be made well ahead. Zesty and fruity – it’s perfect for children too. Definitely one of my all-time favorites.

Ingredients

  • 16 oz fresh mangoes (peeled and stoned weight)
  • 1 scant cup evaporated milk
  • ½

Method

  1. Purée the prepared mangoes in a blender. Transfer to a bowl. Pour the evaporated milk onto the mango purée, add the sugar and mix well.
  2. In a measuring cup, measure 1 scant cup hot water and add the gelatin (and not the other way round or you will get lumpy bits.) Quickly stir until all the gelatin granules have dissolved then add to the puréed mangoes and mix w
