My recipe is a cross between a pancake and a fritter in which whole pieces of banana would be dipped into the mixture then deep-fried. I prefer the lighter pancake version below. There is a fair number of ingredients but most you’ll have in your pantry. Give these pancakes a try: definitely worth it.

  1. Mix the lemon juice, sugar and Grand Marnier in a bowl and toss the bananas in it.
  2. Mix the flour, salt, sugar and baking powder in a bowl.
  3. In a third bowl, melt the butter in a microwave, then mix in the egg yolks, milk and vanilla.
