When I was growing up in Taiwan I was addicted to lychees but my mother would never allow me to eat too many. The Chinese believe that every food has a ‘yin-yang’ quality and some are ‘heat-giving’ foods and others ‘cooling’. This applies to the cooking techniques as well as the ingredients. For example, deep-frying gives food a ‘yang’ heat-giving quality whereas steaming is neutral, and raw foods are cooling or ‘yin’.
